Jalapeno Lime Salted Dark Chocolate Pie

I absolutely love this time of year. I love when the weather gets cold and I have to bundle up on the couch to binge watch netflix. I love the sound of Christmas music playing on the radio and the lights and decorations lining the streets of downtown. Visiting family and eating all the food. It all just puts me in a good mood. But this time of year is also the time period I spend building my base for the upcoming season. I typically take a break in November or December and then begin prepping my body for the upcoming season. In order to get my body back to where I want it to be I focus on my diet as I build. Prepping for the upcoming season comes during the build, not during the grind of high mileage and intense workouts. With the holidays this is always a little hard so I plan for a little indulgence and I make this, a healthy refined sugar free, dairy free, vegan dark chocolate jalapeno lime salted pie with a Purely Elizabeth walnut date crust.

Pad Thai Chicken Burgers

For this week’s recipe, I had to use black and white rice, rice paper, and rice noodles. Initially I was at a loss of what to do with three ingredients that are so drastically different despite all being rice. Rice is one of those ingredients that has a very large array of applications and uses. It is also an ingredient that spans a diverse food culture as it can be found in Italian, American, Asian, Spanish, and Greek cuisines. From all the different types of rice to the different forms and uses in cuisine, the possibilities of what you can make are endless! It's finding a way to make them all work in unison that is the challenge.

Vegetarian Bean Tacos

On my 6th birthday I was spending the day with my Aunt. She told me I could pick a restaurant and pick a present. At the end of the day after weighing all my options thoroughly I ended up choosing Taco Bell and a pair of fuzzy dice. Not entirely sure where my brain was at that point in my life. I mean fuzzy dice? I have no idea why that was my present of choosing but my love of tacos came deep rooted.
