Chicken Tostadas With Neomega Infused Avocado Oils

I love tacos. In any form. I also love avocado. In any form. So when I got my hands on Neomega’s Garlic and Chili Infused Avocado Oils, I knew just want I wanted to make. Avocado oil by itself has a neutral light flavor making it a good choice even for baking. It can also withstand high heat meaning it keeps its nutritional value and there is less of a chance for over heating the oil to a point that creates free radicals. The reason I specifically choose Neomega is for the unreal infusions and I love supporting local. Read on for the full recipe!

Orange, Ginger, & Turmeric Roasted Caulifower with Neomega Oil

After testing out the avocado oil last week I was dying to get my hands on Neomega's Avocado Oil infusions. I had tried quite a few of the options at a tasting and was in love! I had a sample bottle of the basil infusion which, having recently returned from Italy, was right up my alley. I could use it for a caprese salad, drizzling it over the fresh cheese and sliced tomato, or I could use it in a nice pesto, so many possibilities! This recipe was my first test and this is out it turned out!

Being home I was ready to get back in the kitchen to try some new things so when I heard about the tasting I had to be there. But really all you had to say to me was avocado and I was sold. After running my first marathon in Indy last year I came home wanting only 2 things…a gluten free monster cookie and a bowl of guac. I missed out on the monster cookie but I did have a whole bowl of guacamole to myself...but that’s beside the point, finding avocado oil is just another way for me to get my dose of healthy fats from avocado!

Pad Thai Chicken Burgers

For this week’s recipe, I had to use black and white rice, rice paper, and rice noodles. Initially I was at a loss of what to do with three ingredients that are so drastically different despite all being rice. Rice is one of those ingredients that has a very large array of applications and uses. It is also an ingredient that spans a diverse food culture as it can be found in Italian, American, Asian, Spanish, and Greek cuisines. From all the different types of rice to the different forms and uses in cuisine, the possibilities of what you can make are endless! It's finding a way to make them all work in unison that is the challenge.
