Chocolate & Strawberry Superfood Granola Bars

Being just days away from a long awaited vacation in Boulder, CO where I would be running, hiking, biking and soaking up the beauty that is Colorado I wanted to create something I could bring to snack on. Granola bars can make for great snacks but the ones in the stores often are packed with sugar and contain very little protein making them fairly unsustainable. I like the convenience of throwing them in my bag as a just in case snack but I am picky about the ones I buy. 

Superfood Granola Bars

When I started experimenting with my strawberry BiPro I knew I wanted to come up with some type of granola bar. The hard part was matching the correct combination of flavors to create something that wouldn't end up kind of like blah if you know what I mean. The first granola bar I made wasn't sweet enough and ended up fairly bland but I didn't want to add more sugar if I could help it. For ease of creation I also wanted to use a pre-made granola. Then of course I wanted to add a decent amount of protein to make them fulfilling which is essential on a long hike. 

Staring at my pantry I grabbed my bag of Purely Elizabeth Chocolate Sea Salt Probiotic Granola and knew this would make the perfect base! Low in sugar and sweetened naturally with coconut sugar this granola contains superfoods like chia seeds and amaranth, antioxidant rich dark chocolate, and GanedenBC30, a new strain of probiotics that survives the baking process but works its magic in the gut where the moisture level and temperature is just right. 

I grabbed my strawberry BiPro and began thinking of how I could really enhance the strawberry flavor in these bars. Hiding in the corner of my infinite collection of health food baking ingredients I found my Trader Joes Super Red Drink Mix. Sounds weird I know but it is an antioxidant power blend made from a blend of different berries and fruits plus extra probiotics. I would list them all out but you will have to check it out for yourself. This powder makes the perfect edition to smoothies as well! 

Norm's Farms Elderberry Wellness Syrup

Then of course to enhance the flavor and health benefits even more I added a couple tablespoons of Norm's Farms elderberry wellness syrup. I definitely don't want to risk getting sick while on vacation and the anthocyanins will serve me well for enhancing my sleep and recovery after a day of running and hiking at atltitude. I also added some tart cherries made by Country Spoon with no added sugars. Now on to the fun part. The strawberry BiPro. I love this brand of protein powder because it is a natural product containing no artificial sweeteners, flavors, or colors, is gluten free, soy free, lactose free, and contains only 6 ingredients. Superfood Granola Bars

Ingredients:

Directions:

  1. Preheat the oven to 350 and place a sheet of parchment paper on a baking sheet  Set aside.
  2. Put the granola in a bowl and crunch it up a bit (break up the big chunks)
  3. Add the tart cherries, dark chocolate chips, strawberry bipro, and red drink mix and stir together
  4. Now add the rest of the ingredients and mix until well combined.
  5. Place the mixture on the parchment lined baking sheet and form into a rectangle (about 10x8) Don't worry your hands will get dirty! 
  6. Place in the oven and bake for 25-30 minutes until lightly browned around the edges and on top. 
  7. I cut mine into 10 bars and have been storing them in a tupperware container in the fridge.
