Orange, Ginger, & Turmeric Roasted Caulifower with Neomega Oil

After testing out the avocado oil last week I was dying to get my hands on Neomega's Avocado Oil infusions. I had tried quite a few of the options at a tasting and was in love! I had a sample bottle of the basil infusion which, having recently returned from Italy, was right up my alley. I could use it for a caprese salad, drizzling it over the fresh cheese and sliced tomato, or I could use it in a nice pesto, so many possibilities! But what I most interested in trying was the Orange Ginger Turmeric Infusion. Ginger and Turmeric are great in reducing inflammation and aiding in digestion, two things runners must have! Lime Coconut Curry with Neomega Avocado Oil

Finally back in the kitchen! After traveling for most of the last 2 months I jumped at the chance to sample some Neomega Avocado Oil at a tasting in downtown Raleigh. Being home I was ready to get back in the kitchen to try some new things so when I heard about the tasting I had to be there. But really all you had to say to me was avocado and I was sold. After running my first marathon in Indy last year I came home wanting only 2 things…a gluten free monster cookie and a bowl of guac. I missed out on the monster cookie but I did have a whole bowl of guacamole to myself...but that’s beside the point, finding avocado oil is just another way for me to get my dose of healthy fats from avocado!

Sweet Potato Gnocchi in a Sage Brown Butter Sauce

Having sweet potato gnocchi in a sage brown butter sauce sounds like something that would be reserved for a fancy italian restaurant but it's actually something quite easy to make. Easy and quick so it can be a healthy option on a busy night. Now that Nuovo has made a gluten-free gnocchi available in stores, I don't have to go through the hassle of making it from scratch. Plus using grass-fed butter with the recipe helps me up my intake of healthy fats. This whole meal took me about 10-15 minutes to bring together. The hardest part was just getting the timing right! The gnocchi cooks in seconds and the sauce only needs a matter of minutes. The longest step is probably chopping and preparing the kale salad! Enjoy!

Pistachio Crusted & Tamarind Glazed Salmon with Coconut Rice

I did the InsideTracker Ultimate test the week before resuming training post marathon. I wanted to see where I was and adjust anything as needed. I was excited to see my ferritin levels and my iron group being the best it has ever been and a testosterone to cortisol ratio edging higher and higher indicating that I am balancing training and recovery optimally. The one negative trend I did see was a decreasing vitamin D level. While my number was still in the normal healthy range, I was trending downwards from 76 ng/mL in January to 43 ng/mL in November. To give you a frame of reference, InsideTracker considers my optimal range to be from 40-100 ng/mL so if I kept with this trend I would be below optimal in the coming months. Vitmain D levels tend to drop in the winter months due to lack of sun exposure. Considering my number was trending down and we were entering December I needed to work on getting more Vitamin D into my everyday diet. The easiest and best way, eat more fish! That sparked the creation of this Pistachio Crusted & Tamarind Glazed Salmon featuring the Apex Food Company Zutki Sauce.

You don't realize how often or how little you use eggs until you have 4 chickens in your backyard. I bake often but not often enough to keep up with the number of eggs our chickens produce in a week. Jalapeno Lime Salted Dark Chocolate Pie

I absolutely love this time of year. I love when the weather gets cold and I have to bundle up on the couch to binge watch netflix. I love the sound of Christmas music playing on the radio and the lights and decorations lining the streets of downtown. Visiting family and eating all the food. It all just puts me in a good mood. But this time of year is also the time period I spend building my base for the upcoming season. I typically take a break in November or December and then begin prepping my body for the upcoming season. In order to get my body back to where I want it to be I focus on my diet as I build. Prepping for the upcoming season comes during the build, not during the grind of high mileage and intense workouts. With the holidays this is always a little hard so I plan for a little indulgence and I make this, a healthy refined sugar free, dairy free, vegan dark chocolate jalapeno lime salted pie with a Purely Elizabeth walnut date crust.

For this week’s recipe, I had to use black and white rice, rice paper, and rice noodles. Initially I was at a loss of what to do with three ingredients that are so drastically different despite all being rice. Rice is one of those ingredients that has a very large array of applications and uses. It is also an ingredient that spans a diverse food culture as it can be found in Italian, American, Asian, Spanish, and Greek cuisines.
